Indian rice pudding, called kheer, is a well-liked delicacy in India and other countries in South Asia. Kheer is a rich and flavorful dessert that is frequently offered on special occasions or festivals. It is made with rice, milk, sugar, and a variety of spices.

Start by washing a cup of rice in cold water until the water is clear before making kheer. After that, soak the rice for 30 minutes in water. Following that, drain the water and add the rice and four cups of milk to a big saucepan. After bringing the mixture to a boil, lower the heat, cover the pan, and simmer the stew for 20 to 25 minutes, stirring now and again.

One cup of sugar should then be added to the kettle and well mixed until dissolved. Crush some cardamom pods and add a sprinkle of saffron for taste. If you'd like, you may also use chopped nuts like pistachios or almonds.

Kheer should be cooked over low heat for a further 10-15 minutes, or until it attains a creamy consistency. To keep it from sticking to the bottom of the pot, stir it often.

Remove the cooked kheer from the fire and allow it to cool for a few minutes. Add extra chopped nuts or saffron strands as a garnish once it has been transferred to a serving plate.

Depending on your choice, kheer can be served warm or cold. It is a delicious dessert that may be eaten both by itself and with other foods. Kheer is sure to please your taste buds whether you're celebrating a special occasion or are just seeking for a delectable and gratifying dessert.
