Ingredients:


2 cups of short-grain rice
2 tablespoons of oil (vegetable or canola oil)
2 cloves of garlic, minced
1 small onion, diced
1 cup of diced vegetables (carrots, peas, corn, etc.)
1 cup of diced meat (chicken, beef, pork, etc.)
2 eggs, beaten
2 tablespoons of soy sauce
Salt and pepper to taste

Instructions:


Cook the rice according to package instructions until it is tender and fluffy. Spread the cooked rice out on a plate to cool.

In a large wok or frying pan, heat the oil over medium-high heat. Add the garlic and onion and stir-fry for 2-3 minutes or until fragrant.

Add the diced vegetables and meat to the pan and continue stir-frying for 3-4 minutes or until the vegetables are tender and the meat is fully cooked.

Push the vegetables and meat to the sides of the pan to create an empty space in the center. Pour the beaten eggs into the center of the pan and scramble until fully cooked. Then mix the eggs with the rest of the ingredients.

Add the cooled rice to the pan and stir to combine with the vegetables, meat, and eggs.

Pour in the soy sauce and continue to stir-fry for 2-3 minutes or until the rice is heated through and evenly coated with the sauce.
