Ingredients:
For the Crust:
•2 and 1/2 cups all-purpose flour
•1 teaspoon salt
•1 teaspoon sugar
•1 cup unsalted butter, chilled and cubed
•1/4 to 1/2 cup ice water
For the Filling:
•6 to 7 medium apples, peeled, cored, and sliced
•3/4 cup white sugar
•1 tablespoon all-purpose flour
•1 teaspoon ground cinnamon
•1/4 teaspoon nutmeg
•2 tablespoons unsalted butter
Instructions:
1.To make the crust, in a large mixing bowl, whisk together the flour, salt, and sugar.
2.Add in the chilled and cubed butter and use a pastry cutter or your fingertips to blend the mixture until it resembles coarse crumbs.
3.Slowly add in the ice water, 1 tablespoon at a time, until the dough starts to come together.
4.Gently gather the dough into a ball and flatten it into a disk. Wrap it in plastic wrap and refrigerate it for at least 1 hour.
5.To make the filling, in a separate mixing bowl, combine the sliced apples, sugar, flour, cinnamon, and nutmeg.
6.Preheat your oven to 400°F (200°C).
7.On a floured surface, roll out one disk of dough to fit a 9-inch (23 cm) pie dish. Transfer it to the dish and trim the edges.
8.Spoon in the apple filling, spreading it evenly. Dot the top with small pieces of the 2 tablespoons of butter.
9.Roll out the second disk of dough and place it over the top of the filling. Trim and crimp the edges to seal.
10.Cut a few slits in the top of the pie to allow steam to escape.
11.Bake for 50 to 60 minutes, or until the crust is golden brown and the filling is bubbly.
