A traditional food that has been eaten for ages in India and other areas of the world is gulab jamun. Gulab Jamun is a sweet dessert that is made with khoya (milk solids) and flavoured with cardamom and saffron. It is ideal for special occasions.
What you'll need to prepare Gulab Jamun is:
•1 cup of khoya
•2 tablespoons of all-purpose flour
•1/4 teaspoon of baking soda
•2 tablespoons of milk
•Oil for frying
•1 1/2 cups of sugar
•1 1/2 cups of water
•4-5 cardamom pods, crushed
•A pinch of saffron
Instructions:
1. Crumble the khoya and combine it with the all-purpose flour and baking soda in a mixing dish. Stir well until the mixture becomes a soft dough.
2. Work the ingredients into a smooth, malleable dough by gradually adding the milk. If the dough is overworked, the gulab jamuns will become dense and hard.
3. Scoop out equal-sized balls of dough and roll each one between your palms until it is smooth and free of cracks. The balls should be tiny since they will slightly enlarge when cooked.
4. Heat enough oil in a deep frying pan to completely cover the gulab jamuns. Reduce the heat to medium after the oil is heated, then gently add the balls to the oil. The gulab jamuns should be fried until golden brown, regularly flipping them to make sure they are cooked all the way through.
5. Heat the sugar and water in a separate saucepan until the sugar melts. Simmer the sugar syrup with the cardamom pods that have been crushed and the saffron for 5 to 7 minutes, or until it slightly thickens.
6. Take the gulab jamuns out of the oil and mix them with the hot sugar syrup. For at least an hour, let the gulab jamuns soak in the taste of the syrup.
7. If preferred, top the gulab jamuns with a dollop of ice cream or serve them cold or warm with chopped nuts as a garnish.
